Just like our San Antonio Spurs, it takes a variety of ingredients to balance together to make one astounding dish. Everything from salty to sweet, and acidity to boldness. Our featured speaker, Michael Stavros, Director of Business Development from M Culinary Concepts, knows exactly how to bring the Wow Factor with each client that comes to him. Come learn his techniques and get his advice on what we as event professionals can do to score a SLAM DUNK with all our clients. 

Michael Stavros has been in the catering business for 21+ years and brings to his professional life a passion for expanding his culinary horizons matched by a desire to build lasting relationships--and love of a good time! Cutting his teeth with one of the most respected catering companies in Arizona, Stavros went on to develop, launch, and manage a boutique luxury brand for the industry giant Aramark, working with conventions, corporate, and private clients throught the country. In January 2010, Michael Stavros joined M Culinary Concepts, leading company wide sales and marketing efforts, developing long-term growth plans and strategic partnerships that strengthened relationships and celebrated community. Stavros and his team of "Sales Junkies" and Event Producers have grown M Culinary Concepts into the largest privately held catering company in the Southwest, with 2018 sales of $34 Million. In all things, Michael Stavros and the M Culinary approach catering and events the same way they approach life: with authenticity, irreverence, passion, and compassion.

Artisan Cheese and Smoked Meat Display

Hand carved imported and domestic cheeses, smoked and cured meats, pickled vegetables, sweet and savory jams, local honey, assorted dips, crackers and flatbreads

Chef's Creative Appetizer Station 

Crispy Japanese tempura shrimp, mango sauce and balsamic-soy syrup served in a paper cone

Black squid tapioca "chicharron", topped with your choice of ahi tuna tartar or lomi lomi salmon, avacado cream and cilantro microgreens

Chicken kataifi, shredded phyllo, tropical fruit salsa, orange habanero reduction and smoked salt

Stir Fry Noodle Station 

Spicy beef Mongolian & sweet and spicy chicken

3lb ribeye tomahawk carved to order, garlic au jus and wild mushroom sauce

rainbow potatoes, white, purple, and red roasted to perfection with fresh herbs and roasted garlic

Grilled Heirloom Carrots

yellow, purple, red, and orange carrots grilled and glazed with honey cinnamon butter sauce
